Because different towns were trying to establish a wing power record, and if a Wonderbolt helps to set a new record, the attempt is made void by 'cheating'.

yeah but there was enough ponies out sick there was really no reason she couldn't help because they wouldn't have broken the record anyway

Probably she would have just flown to Fillydelphia to get their squad if the Ponyvillians really couldn't get it and she'd help along herself as well, for good measure. Fluttershy just...interrupted her, is all. And Rainbow Dash wouldn't quit, either. We could have had a Crowning Moment of Heartwarming with Spitfire and RD if they really couldn't do it. She'd drag her and the rest to the hospital, then get her spare squad to do it. And the Aesop would have been totally different, of not pushing yourself beyond a very obvious and crippling limit...Season 3, here we come!

*ahem* I mean, it's not like they were on a supertight schedule. There wasn't a good reason they couldn't lift the water on another day, was there? If push came to shove, Spitfire could have fixed the whole thing with a few gestures...that was probably the whole reason she was there to supervise in the first place.
